Method
- Heat butter or olive oil in a large pot over medium heat.
- Add chopped onion and cook until soft and translucent.
- Add minced garlic and cook for about 1 minute.
- Stir in diced potatoes and cook for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Simmer for 15–20 minutes until potatoes are tender.
- Blend the soup until smooth or partially smooth.
- Stir in milk or cream and season with salt, pepper, and paprika.
- Simmer for a few minutes and serve warm with toppings.
Notes
Roasted garlic can be used for a deeper flavor.
