- Peel green plantains and cut into chunks.
- Fry plantain pieces in oil until lightly golden and tender.
- Mash garlic and salt in a mortar and pestle.
- Add pork cracklings and fried plantains and mash together with olive oil.
- Shape mashed mixture into mounds or bowls.
- Heat butter and olive oil in a skillet and sauté garlic.
- Add shrimp and cook until pink and fully cooked.
- Finish with lime juice and cilantro, then spoon shrimp over mofongo and serve.
Notes
Serve immediately with extra garlic butter sauce for best flavor.
