Ingredients

Main Ingredients
  • 12 oz cheese tortellini fresh or refrigerated
  • 8 oz steak ribeye or sirloin, thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 0.25 tsp red pepper flakes optional
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • Salt and pepper to taste

Equipment

  • Large skillet
  • Saucepan
  • Mixing spoon

Method

  1. Cook tortellini according to package instructions, drain, and set aside.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season steak with salt and pepper and sear 2–3 minutes per side. Remove from skillet.
  3. Reduce heat to medium. Add butter and remaining olive oil, sauté garlic (and red pepper flakes if using) for 30 seconds.
  4. Add cooked tortellini to skillet and toss in garlic butter. Return steak and combine gently.
  5. Sprinkle with Parmesan and parsley, toss lightly, and serve hot.

Notes

Use thinly sliced steak for quick cooking and tender results.
