Ingredients
  

Pasta & Sauce
  • 250 g rigatoni
  • 0.25 cup olive oil
  • 1 shallot finely chopped
  • 2 cloves garlic minced
  • 0.25 cup tomato paste
  • 1 tsp red chili flakes
  • 0.25 cup heavy cream
  • 1 tbsp butter
  • 2 tbsp parmesan cheese grated
  • 1 tbsp vodka optional
  • 0.5 cup reserved pasta water as needed
  • 1 tbsp fresh basil for garnish

Equipment

Method
 

  1. Cook pasta in salted boiling water until al dente and reserve some pasta water.
  2. Sauté shallot in olive oil over medium heat until soft.
  3. Add garlic and cook briefly until fragrant.
  4. Stir in tomato paste and cook until slightly darkened and caramelized.
  5. Add chili flakes and vodka, simmering briefly.
  6. Lower heat and stir in heavy cream until smooth.
  7. Mix in butter and parmesan cheese until melted.
  8. Add cooked pasta and pasta water to achieve desired sauce consistency, then serve.
