Method
- Heat olive oil and sesame oil in a large pot over medium heat. Add diced onion and sauté 3–4 minutes.
- Add minced garlic and grated ginger. Cook for 1 minute, stirring often.
- Add sliced carrots and celery. Cook another 3 minutes.
- Pour in chicken broth, soy sauce, pepper, and shredded chicken. Stir well.
- Bring soup to a simmer and cook for 10 minutes.
- Add egg noodles and cook until tender, 6–8 minutes.
- Stir in rice vinegar if using. Adjust seasoning with salt or soy sauce.
- Serve hot topped with green onions, cilantro, and lime juice.
Notes
For extra richness, add a splash of coconut milk. For more spice, add chili garlic sauce.
