  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 tbsp fresh ginger grated
  • 2 carrots sliced
  • 1 celery stalk sliced
  • 6 cups chicken broth
  • 2 cups shredded chicken cooked
  • 5 oz egg noodles
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar optional
  • 1 tsp black pepper
  • salt to taste
  • 2 green onions chopped
  • 2 tbsp cilantro chopped
  • lime wedges for serving

Method
 

  1. Heat olive oil and sesame oil in a large pot over medium heat. Add diced onion and sauté 3–4 minutes.
  2. Add minced garlic and grated ginger. Cook for 1 minute, stirring often.
  3. Add sliced carrots and celery. Cook another 3 minutes.
  4. Pour in chicken broth, soy sauce, pepper, and shredded chicken. Stir well.
  5. Bring soup to a simmer and cook for 10 minutes.
  6. Add egg noodles and cook until tender, 6–8 minutes.
  7. Stir in rice vinegar if using. Adjust seasoning with salt or soy sauce.
  8. Serve hot topped with green onions, cilantro, and lime juice.

Notes

For extra richness, add a splash of coconut milk. For more spice, add chili garlic sauce.
