- Heat olive oil and sauté onion until softened.
- Add garlic and ginger; cook until fragrant.
- Add carrots and celery; cook briefly.
- Add chicken, broth, water, and seasoning; simmer 20–25 minutes.
- Remove and shred chicken; return to pot.
- Add noodles and cook until tender.
- Garnish and serve warm.
Notes
For meal prep, cook noodles separately and add when reheating to prevent sogginess.
