Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 chicken breasts boneless skinless
  • 6 cups chicken broth low sodium
  • 1 cup water
  • 1 tbsp soy sauce optional
  • 2 cups egg noodles

Equipment

  • Large soup pot
  • Cutting board
  • Knife
  • Wooden spoon

Method
 

  1. Heat olive oil and sauté onion until softened.
  2. Add garlic and ginger; cook until fragrant.
  3. Add carrots and celery; cook briefly.
  4. Add chicken, broth, water, and seasoning; simmer 20–25 minutes.
  5. Remove and shred chicken; return to pot.
  6. Add noodles and cook until tender.
  7. Garnish and serve warm.

Notes

For meal prep, cook noodles separately and add when reheating to prevent sogginess.
