Ingredients
  

Chicken
  • 1.5 lbs chicken thighs or breast
  • 1 tbsp fresh ginger thinly sliced
  • 0.5 tsp salt
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
Spring Onion Oil
  • 4 spring onions finely chopped
  • 1 tbsp fresh ginger minced
  • 3 tbsp neutral cooking oil
  • 0.5 tsp salt
  • 1 tsp light soy sauce

Equipment

  • Steamer or steaming rack
  • Heatproof plate
  • Small saucepan
  • Mixing bowl

Method
 

  1. Place chicken on a heatproof plate and season with salt, soy sauce, and sesame oil.
  2. Add sliced ginger on top of the chicken.
  3. Steam chicken for 18–22 minutes until cooked through.
  4. Place chopped spring onions and minced ginger in a bowl.
  5. Heat oil until very hot and pour over scallions and ginger.
  6. Add salt and soy sauce to the oil mixture.
  7. Pour spring onion oil over the steamed chicken.
  8. Garnish and serve immediately.

Notes

Serve with steamed rice for a classic meal.
