Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 0.5 tsp nutmeg
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 1 egg large
  • 0.33 cup molasses
  • 1 tsp vanilla extract
Coating
  • 0.5 cup granulated sugar
  • 0.75 cup powdered sugar

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, spices, baking soda, and salt in a bowl.
  3. Cream butter and brown sugar until light and fluffy.
  4. Mix in egg, molasses, and vanilla until smooth.
  5. Gradually add dry ingredients and mix just until combined.
  6. Roll dough into balls and coat in granulated sugar, then powdered sugar.
  7. Bake for 10–12 minutes until cracked and set on edges.
  8. Cool slightly, then transfer to wire rack to cool completely.

Notes

Do not overbake for soft centers. Chill dough briefly if too sticky.
