Ingredients
  

  • 2 cups all-purpose flour
  • 0.25 cup brown sugar packed
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 1.75 cups milk
  • 2 eggs large
  • 0.25 cup unsalted butter melted
  • 0.25 cup molasses
  • 1 tsp vanilla extract
  • maple syrup for serving

Method
 

  1. Whisk together dry ingredients in a large bowl.
  2. In another bowl, whisk milk, eggs, melted butter, molasses, and vanilla.
  3. Combine wet and dry ingredients just until mixed.
  4. Heat a greased skillet over medium heat.
  5. Pour 1/4 cup batter per pancake and cook until bubbles form.
  6. Flip and cook until golden brown.
  7. Serve warm with maple syrup.

Notes

Avoid overmixing to keep pancakes light and fluffy.
