Grilled Chicken
  • 1.5 lb chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 0.5 tsp Italian herbs
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Broccoli
  • 4 cups broccoli florets
  • 1 tbsp olive oil
Base
  • 3 cups cooked rice or quinoa
Creamy Garlic Sauce
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 3 tbsp flour
  • 2 cups milk or half-and-half
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp Italian seasoning
  • 0.25 cup parmesan optional
  • 0.5 lemon juiced
  • 1 tbsp parsley chopped

Method
 

  1. Season chicken with oil, garlic powder, onion powder, paprika, herbs, salt, pepper, and optional lemon.
  2. Grill chicken on medium-high heat until cooked through; rest and slice.
  3. Toss broccoli with oil, salt, and pepper; roast or steam until crisp-tender.
  4. Make the creamy garlic sauce by melting butter, adding garlic, whisking in flour, then slowly adding milk and seasonings until thick and smooth.
  5. Assemble bowls with rice, chicken, broccoli, and creamy garlic sauce.

Notes

For added richness, stir 2 tbsp cream cheese into the garlic sauce.
