Grilled Chicken
  • 1.5 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice
Broccoli
  • 4 cups broccoli florets
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Creamy Garlic Sauce
  • 0.5 cup plain Greek yogurt
  • 0.25 cup mayonnaise
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 0.25 tsp salt
  • 0.25 tsp black pepper
For Serving
  • 3 cups cooked rice white or brown
  • 2 tbsp fresh parsley chopped

Method
 

  1. Season chicken with oil, spices, and lemon juice.
  2. Grill chicken until cooked through and slice.
  3. Cook broccoli until tender-crisp.
  4. Whisk together creamy garlic sauce ingredients.
  5. Assemble bowls with rice, chicken, broccoli, and sauce.
