  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup butterscotch chips

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugars until light and fluffy.
  3. Add egg and vanilla extract, mixing until smooth.
  4. Whisk flour, baking soda, and salt separately, then combine with wet ingredients.
  5. Fold in butterscotch chips evenly.
  6. Chill dough 20–30 minutes for best texture.
  7. Bake 10–12 minutes until edges are set but centers are soft.
  8. Cool and drizzle with caramel or butterscotch if desired.
