Cupcakes
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.75 cup cream soda
  • 0.5 cup butterscotch chips
Buttercream Frosting
  • 0.75 cup unsalted butter softened
  • 3 cups powdered sugar
  • 0.25 cup butterscotch sauce
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream

Method
 

  1. Preheat oven to 350°F (175°C) and line a cupcake pan.
  2. Whisk flour, baking powder, baking soda, and salt together.
  3. Cream butter and sugars until light and fluffy.
  4. Add eggs and vanilla, mixing well.
  5. Alternate adding dry ingredients and cream soda until combined.
  6. Fold in butterscotch chips.
  7. Bake 18–22 minutes, then cool completely.
  8. Beat frosting ingredients until fluffy and pipe onto cupcakes.

Notes

Decorate with gold sprinkles or caramel drizzle for a magical finish.
