Method
- Combine shredded coconut, maple syrup, melted coconut oil, vanilla, and salt in a bowl.
- Mix until the mixture holds together.
- Shape into small rectangular bars and place on a parchment-lined tray.
- Press one almond on top of each bar.
- Freeze bars for 20–30 minutes until firm.
- Melt chocolate chips and coconut oil until smooth.
- Dip each coconut bar into melted chocolate.
- Place back on parchment and chill until chocolate hardens.
