Ingredients
  

Coconut Filling
  • 2 cups unsweetened shredded coconut
  • 0.25 cup maple syrup or honey
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 pinch salt
Chocolate Coating
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil
Topping
  • 24 whole almonds

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Combine shredded coconut, maple syrup, melted coconut oil, vanilla, and salt in a bowl.
  2. Mix until the mixture holds together.
  3. Shape into small rectangular bars and place on a parchment-lined tray.
  4. Press one almond on top of each bar.
  5. Freeze bars for 20–30 minutes until firm.
  6. Melt chocolate chips and coconut oil until smooth.
  7. Dip each coconut bar into melted chocolate.
  8. Place back on parchment and chill until chocolate hardens.

Notes

Keep refrigerated or frozen for best texture.
