Method
- Preheat oven to 400°F (205°C) and lightly grease a baking dish.
- Add potatoes to the dish and toss with olive oil, garlic, herbs, salt, and pepper.
- Place the block of feta in the center and scatter tomatoes around.
- Bake uncovered for 40–45 minutes, stirring potatoes halfway through.
- Remove from oven, squeeze lemon juice over dish, and gently mix feta with potatoes.
- Garnish with fresh herbs and serve warm.
Notes
Serve immediately for best texture. Add olives or chickpeas for extra flavor and protein.
