Ingredients
  

  • 1.5 lb baby potatoes halved
  • 7 oz feta cheese block
  • 3 tbsp olive oil extra virgin
  • 3 cloves garlic smashed
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 1 tbsp fresh rosemary chopped
  • 1 cup cherry tomatoes optional
  • 1 tbsp lemon juice fresh
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 400°F (205°C) and lightly grease a baking dish.
  2. Add potatoes to the dish and toss with olive oil, garlic, herbs, salt, and pepper.
  3. Place the block of feta in the center and scatter tomatoes around.
  4. Bake uncovered for 40–45 minutes, stirring potatoes halfway through.
  5. Remove from oven, squeeze lemon juice over dish, and gently mix feta with potatoes.
  6. Garnish with fresh herbs and serve warm.

Notes

Serve immediately for best texture. Add olives or chickpeas for extra flavor and protein.
