Pancake Batter
  • 1 cup rolled oats
  • 1 banana ripe
  • 2 eggs
  • 0.5 cup milk
  • 1 tsp baking powder
  • 0.5 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Add oats, banana, eggs, milk, baking powder, cinnamon, vanilla, and salt to a blender.
  2. Blend until the batter is smooth.
  3. Let batter rest for 2–3 minutes.
  4. Heat a lightly greased skillet over medium heat.
  5. Pour small portions of batter onto the pan.
  6. Cook 2–3 minutes until bubbles form.
  7. Flip and cook another 1–2 minutes.
  8. Serve warm with toppings.

Notes

Use very ripe bananas for the best flavor and natural sweetness.
