Method
- Season chicken breasts with salt, pepper, Italian seasoning, paprika, and garlic.
- Heat olive oil in a skillet and cook chicken 3–4 minutes per side until golden.
- Remove chicken from skillet and set aside.
- Add olive oil, zucchini, and squash to skillet. Season and cook until tender.
- Return chicken to the skillet and reduce heat.
- Squeeze lemon juice over the dish and stir gently.
- Garnish with parsley and serve warm.
Notes
Add mushrooms or onions for extra flavor. Serve with brown rice or cauliflower rice.
