Ingredients
  

Dry Ingredients
  • 1.5 cups rolled oats
  • 1 cup almond flour
  • 1 tsp baking soda
  • 0.25 tsp salt
  • 1 tsp cinnamon
  • 0.25 cup unsweetened shredded coconut optional
Wet Ingredients
  • 2 ripe bananas mashed
  • 0.5 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 0.25 cup coconut oil melted
Add-Ins
  • 0.33 cup sugar-free chocolate chips or cacao nibs
  • 0.25 cup chopped nuts walnuts, almonds, or pecans

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, almond flour, baking soda, salt, cinnamon, and optional coconut.
  3. In another bowl, mash bananas and mix with applesauce, vanilla, and melted coconut oil.
  4. Pour wet ingredients into dry ingredients and stir until combined. Fold in chocolate chips and nuts.
  5. Scoop tablespoon-sized portions onto baking sheet and flatten slightly.
  6. Bake 12–15 minutes or until edges are lightly golden. Cool 5 minutes before transferring to wire rack.
  7. Enjoy immediately or store in airtight container for up to 4 days.

Notes

Optional: add a few drops of stevia for extra sweetness or mix in berries for flavor variation.
