Cake Batter
  • 3 ripe bananas mashed
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon optional
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup milk or buttermilk
  • 1 cup chopped walnuts toasted
Cream Frosting
  • 1 cup heavy cream cold
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and prepare two round cake pans with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla and mashed bananas.
  5. Alternate adding dry ingredients and milk, mixing until just combined.
  6. Fold in chopped toasted walnuts and divide batter into pans.
  7. Bake for 28–32 minutes until a toothpick inserted comes out clean. Cool completely.
  8. Beat cream cheese, powdered sugar, and vanilla until smooth, then fold in whipped heavy cream.
  9. Layer and frost the cooled cakes, chill briefly, then slice and serve.

Notes

Use very ripe bananas for maximum sweetness and moisture. Toast walnuts for deeper flavor.
