Method
- Preheat oven to 350°F (175°C) and prepare two round cake pans with parchment paper.
- Whisk together flour, baking powder, baking soda, salt, and cinnamon in a bowl.
- Cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla and mashed bananas.
- Alternate adding dry ingredients and milk, mixing until just combined.
- Fold in chopped toasted walnuts and divide batter into pans.
- Bake for 28–32 minutes until a toothpick inserted comes out clean. Cool completely.
- Beat cream cheese, powdered sugar, and vanilla until smooth, then fold in whipped heavy cream.
- Layer and frost the cooled cakes, chill briefly, then slice and serve.
Notes
Use very ripe bananas for maximum sweetness and moisture. Toast walnuts for deeper flavor.
