Ingredients
  

Pudding Base
  • 0.25 cup chia seeds
  • 1 cup unsweetened almond milk
  • 2 tbsp unsweetened cocoa powder
  • 1 scoop protein powder chocolate or vanilla
  • 1-2 tbsp maple syrup or sugar-free sweetener
  • 0.5 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Whisk almond milk, cocoa powder, protein powder, sweetener, vanilla, and salt until smooth.
  2. Stir in chia seeds and mix thoroughly.
  3. Let rest 5 minutes, then whisk again to prevent clumping.
  4. Cover and refrigerate at least 4 hours or overnight until thickened.
  5. Stir before serving and add desired toppings.

Notes

Blend after chilling for ultra-smooth texture if desired.
