Method
- Mix shredded coconut, sweetened condensed milk, and vanilla in a bowl until thick and sticky.
- Shape into small bars and place on a parchment-lined baking sheet.
- Press one almond onto each bar and refrigerate for 30 minutes until firm.
- Melt chocolate chips with coconut oil until smooth.
- Dip each bar into the melted chocolate, fully coating it, and place back on parchment.
- Chill until chocolate sets, then enjoy or store in the fridge.
Notes
Add a sprinkle of flaky salt before the chocolate sets for a gourmet touch.
