Ingredients
  

Coconut Filling
  • 2 cups sweetened shredded coconut
  • 0.75 cup sweetened condensed milk
  • 1 tsp vanilla extract
Topping & Coating
  • 24 whole almonds raw or roasted
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil optional, for smoother coating

Method
 

  1. Mix shredded coconut, sweetened condensed milk, and vanilla in a bowl until thick and sticky.
  2. Shape into small bars and place on a parchment-lined baking sheet.
  3. Press one almond onto each bar and refrigerate for 30 minutes until firm.
  4. Melt chocolate chips with coconut oil until smooth.
  5. Dip each bar into the melted chocolate, fully coating it, and place back on parchment.
  6. Chill until chocolate sets, then enjoy or store in the fridge.

Notes

Add a sprinkle of flaky salt before the chocolate sets for a gourmet touch.
