Ingredients
  

Stuffing Base
  • 1 loaf rustic bread cut into 1-inch cubes
  • 0.75 cup unsalted butter
  • 1 large onion finely chopped
  • 3 stalks celery finely chopped
  • 2 cloves garlic minced
  • 2.5 cups chicken broth or vegetable broth
  • 2 eggs lightly beaten
  • 2 tbsp fresh parsley chopped
  • 1 tsp fresh thyme or 1/2 tsp dried
  • 1 tsp fresh sage or 1/2 tsp dried
  • 0.5 tsp dried rosemary crushed
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 350°F (175°C). Dry bread cubes on a baking sheet for 15–20 minutes until crisp.
  2. Melt butter in skillet, sauté onion and celery until soft, about 8–10 minutes. Add garlic and herbs; cook 1 more minute.
  3. Combine bread cubes and sautéed vegetables in a large bowl. Add broth gradually, then stir in beaten eggs and parsley.
  4. Transfer to greased baking dish. Cover with foil and bake 30 minutes; uncover and bake 15–20 minutes more until golden brown.

Notes

To prepare ahead, assemble stuffing a day before and refrigerate; bake before serving.
