Ingredients
  

Vegetables
  • 3 carrots peeled and chopped
  • 2 parsnips peeled and chopped
  • 2 potatoes cubed
  • 1 sweet potato cubed
Seasoning
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 3 cloves garlic minced
  • 1 tsp thyme
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet.
  2. Peel and chop all root vegetables into even pieces.
  3. Whisk olive oil, honey, garlic, thyme, salt, and pepper in a bowl.
  4. Toss vegetables with the honey mixture until evenly coated.
  5. Spread vegetables in a single layer on a baking sheet.
  6. Roast for 30–35 minutes, stirring halfway through.
  7. Serve warm with fresh herbs if desired.

Notes

Add turnips or beets for additional flavor and color.
