Method
- Preheat oven to 400°F (200°C) and prepare a baking sheet.
- Peel and chop all root vegetables into even pieces.
- Whisk olive oil, honey, garlic, thyme, salt, and pepper in a bowl.
- Toss vegetables with the honey mixture until evenly coated.
- Spread vegetables in a single layer on a baking sheet.
- Roast for 30–35 minutes, stirring halfway through.
- Serve warm with fresh herbs if desired.
Notes
Add turnips or beets for additional flavor and color.
