Method
- Preheat oven to 425°F (220°C) and line a springform pan with parchment.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well.
- Mix in heavy cream and vanilla.
- Sift in flour and salt and mix gently.
- Pour batter into pan.
- Bake 45–50 minutes until top is deeply caramelized and center jiggles.
- Cool completely, then refrigerate at least 4 hours before serving.
Notes
The center should remain creamy and custard-like when sliced.
