Ingredients
  

  • 24 oz cream cheese full-fat, softened
  • 1.25 cups granulated sugar
  • 4 eggs large, room temperature
  • 1 cup heavy cream
  • 2 tsp vanilla extract
  • 0.25 cup all-purpose flour
  • 0.5 tsp salt

Method
 

  1. Preheat oven to 425°F (220°C) and line a springform pan with parchment.
  2. Beat cream cheese and sugar until smooth.
  3. Add eggs one at a time, mixing well.
  4. Mix in heavy cream and vanilla.
  5. Sift in flour and salt and mix gently.
  6. Pour batter into pan.
  7. Bake 45–50 minutes until top is deeply caramelized and center jiggles.
  8. Cool completely, then refrigerate at least 4 hours before serving.

Notes

The center should remain creamy and custard-like when sliced.
