Ingredients
  

Cake Batter
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 3 egg large
  • 1 tsp vanilla extract
  • 1 cup Greek yogurt
  • optional lemon zest, berries, or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and prepare an 8-inch cake pan.
  2. Sift together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Mix in Greek yogurt until smooth.
  6. Fold in dry ingredients gently until fully incorporated.
  7. Add optional mix-ins if desired.
  8. Pour batter into prepared pan and bake 35–40 minutes or until a toothpick comes out clean.
  9. Cool 10 minutes in pan, then transfer to wire rack. Serve plain or with toppings.

Notes

Use room temperature ingredients for best texture. Avoid overmixing.
