Method
- Preheat oven to 375°F and grease a 9-inch pie dish.
- Sauté onion for 3 minutes, then add garlic for 1 minute.
- Whisk eggs, cottage cheese, salt, pepper, oregano, and basil in a large bowl.
- Stir in spinach and the sautéed onion/garlic mixture.
- Fold in shredded cheese.
- Pour mixture into the pie dish and smooth the top.
- Bake 30–35 minutes until center is set and top is lightly golden.
Notes
Blend cottage cheese for an extra smooth custard if desired.
