  • 1 cup cottage cheese full-fat or low-fat
  • 6 eggs
  • 1 cup spinach fresh or frozen (squeezed dry)
  • 0.5 cup shredded mozzarella or cheddar
  • 0.25 cup onion diced
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp oregano optional
  • 0.5 tsp basil optional

Method
 

  1. Preheat oven to 375°F and grease a 9-inch pie dish.
  2. Sauté onion for 3 minutes, then add garlic for 1 minute.
  3. Whisk eggs, cottage cheese, salt, pepper, oregano, and basil in a large bowl.
  4. Stir in spinach and the sautéed onion/garlic mixture.
  5. Fold in shredded cheese.
  6. Pour mixture into the pie dish and smooth the top.
  7. Bake 30–35 minutes until center is set and top is lightly golden.

Notes

Blend cottage cheese for an extra smooth custard if desired.
