Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 egg large
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 tbsp heavy cream
Brûlée Topping
  • 0.5 cup granulated sugar for caramelizing

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream butter and sugars until light and fluffy, then mix in egg, egg yolk, vanilla, and cream.
  4. Gradually add dry ingredients to form a soft dough.
  5. Scoop dough balls onto baking sheet and flatten slightly.
  6. Bake 10–12 minutes until edges are lightly golden and centers remain soft.
  7. Cool completely on a wire rack before adding sugar topping.
  8. Sprinkle sugar evenly on top and torch until caramelized and crisp.

Notes

For best texture, torch the sugar just before serving to maintain the signature crisp brûlée crack.
