- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt in a bowl.
- Cream butter and sugars until light and fluffy, then mix in egg, egg yolk, vanilla, and cream.
- Gradually add dry ingredients to form a soft dough.
- Scoop dough balls onto baking sheet and flatten slightly.
- Bake 10–12 minutes until edges are lightly golden and centers remain soft.
- Cool completely on a wire rack before adding sugar topping.
- Sprinkle sugar evenly on top and torch until caramelized and crisp.
Notes
For best texture, torch the sugar just before serving to maintain the signature crisp brûlée crack.
