Ingredients
  

Apple Filling
  • 3 apples peeled and diced
  • 2 tbsp butter
  • 0.25 cup brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp water
Cookie Base
  • 2 pie crusts refrigerated
  • 1 egg beaten
  • 2 tbsp coarse sugar optional
Topping
  • 0.5 cup caramel sauce warmed
  • 1 tsp flaky sea salt

Method
 

  1. Cook diced apples with butter, sugars, cinnamon, nutmeg, and lemon juice until softened.
  2. Mix cornstarch and water, then stir into apple mixture to thicken; cool completely.
  3. Preheat oven to 375°F (190°C).
  4. Cut circles from pie crusts and place half on a lined baking sheet.
  5. Add 1–2 teaspoons apple filling to each dough circle.
  6. Top with remaining dough circles and seal edges.
  7. Brush with egg wash and sprinkle with coarse sugar.
  8. Bake 15–18 minutes until golden brown.
  9. Drizzle warm cookies with caramel sauce and sprinkle flaky sea salt.

Notes

Cool filling to avoid breaking the dough seal. Freeze cookies before caramel for long-term storage.
