Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 1 cup sugar
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup buttermilk
Filling
  • 1 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 cup marshmallow fluff
  • 1 tsp vanilla extract
  • 1-2 tbsp heavy cream as needed

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk flour, cocoa powder, baking soda, baking powder, and salt.
  3. Beat butter and sugar until light and fluffy.
  4. Add egg and vanilla; mix until smooth.
  5. Mix in dry ingredients and buttermilk alternately until batter is smooth.
  6. Scoop batter onto sheets and bake 10–12 minutes.
  7. Cool cookies completely.
  8. Beat butter until creamy; add powdered sugar gradually.
  9. Mix in marshmallow fluff and vanilla.
  10. Pipe or spread filling onto cookies and sandwich together.

Chill assembled whoopie pies for cleaner edges and easier handling.
