Italian Sausage White Bean Soup

Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or hot
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 carrots sliced
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 14.5 oz diced tomatoes canned
  • 30 oz white beans drained and rinsed
  • 6 cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp crushed red pepper flakes optional
  • salt and pepper to taste
Finishing
  • 3 cups spinach or kale
  • 0.25 cup fresh parsley chopped
  • grated Parmesan optional

Equipment

Method
 

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
  2. Add onions, carrots, and celery. Cook 5–7 minutes until softened.
  3. Stir in garlic, oregano, basil, red pepper flakes, salt, and pepper. Cook 30 seconds.
  4. Add diced tomatoes, white beans, and chicken broth. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
  6. Stir in spinach or kale and cook 2–3 minutes until wilted.
  7. Taste and adjust seasoning. Serve with parsley and Parmesan.

Notes

For a creamy variation, add 1/2 cup heavy cream at the end.
