  • 2 cups corn kernels
  • 1-2 jalapeños finely diced
  • 8 oz cream cheese softened
  • 0.5 cup sour cream
  • 1 cup cheddar cheese shredded
  • 0.25 cup green onions chopped
  • 1 clove garlic minced
  • 1 tbsp lime juice
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Mix cream cheese and sour cream until smooth.
  2. Stir in cheddar cheese, corn, jalapeños, green onions, and garlic.
  3. Add lime juice, smoked paprika, salt, and pepper. Mix well.
  4. Serve chilled or bake at 375°F for 20 minutes until bubbly.
