Ingredients
  

  • 1 large cauliflower cut into florets
  • 8 oz cream cheese softened
  • 0.5 cup sour cream
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 0.5 cup bacon cooked and crumbled
  • 2 jalapeños diced
  • 2 cloves garlic minced
  • 0.5 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F and grease a casserole dish.
  2. Cook cauliflower until just tender; drain well.
  3. Mix cream cheese, sour cream, garlic, and spices.
  4. Stir in cheeses, jalapeños, and bacon.
  5. Fold in cauliflower and transfer to dish.
  6. Bake 25–30 minutes until bubbly and golden.

Notes

Drain cauliflower thoroughly to avoid excess moisture.
