Method
- Season chicken with salt, pepper, allspice, soy sauce, browning sauce, garlic, scallions, thyme, and onion.
- Marinate the chicken for at least 30 minutes.
- Heat oil in a large skillet and brown chicken pieces on both sides.
- Add the reserved marinade, tomato, bell pepper, carrot, and Scotch bonnet pepper.
- Pour in chicken broth and bring to a simmer.
- Cover and cook for 30–35 minutes until chicken is tender.
- Taste and adjust seasoning before serving.
Notes
Serve with rice and peas or steamed rice for an authentic Jamaican meal.
