Ingredients
  

Chicken Marinade
  • 2 lbs chicken pieces
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp allspice
  • 1 tbsp soy sauce
  • 1 tbsp browning sauce
  • 4 cloves garlic minced
  • 3 scallions chopped
  • 1 onion sliced
  • 1 tsp thyme
Stew Base
  • 1 tomato chopped
  • 1 bell pepper sliced
  • 1 carrot sliced
  • 1 Scotch bonnet pepper optional
  • 1 tbsp vegetable oil
  • 1 cup chicken broth

Equipment

  • Large skillet or Dutch oven
  • Mixing bowl
  • Knife
  • Cutting board

Method
 

  1. Season chicken with salt, pepper, allspice, soy sauce, browning sauce, garlic, scallions, thyme, and onion.
  2. Marinate the chicken for at least 30 minutes.
  3. Heat oil in a large skillet and brown chicken pieces on both sides.
  4. Add the reserved marinade, tomato, bell pepper, carrot, and Scotch bonnet pepper.
  5. Pour in chicken broth and bring to a simmer.
  6. Cover and cook for 30–35 minutes until chicken is tender.
  7. Taste and adjust seasoning before serving.

Notes

Serve with rice and peas or steamed rice for an authentic Jamaican meal.
