Method
- Preheat oven to 325°F (165°C) or set slow cooker to low.
- Sear beef roast on all sides in a skillet until browned; remove.
- Caramelize onions in butter, add garlic for 1 minute.
- Place roast in roasting pan or slow cooker, top with onions, add broth, Worcestershire, thyme, salt, and pepper.
- Cook slowly: oven 3–4 hours covered, slow cooker 6–8 hours low.
- Optional: thicken gravy by whisking flour with cold broth, add to cooking liquid.
- Slice roast, top with onions and gravy, garnish with parsley, and serve.
Notes
For richer flavor, add 1 cup of red wine to broth.
