Main Ingredients
  • 3-4 lb beef chuck roast
  • 3 tbsp butter
  • 2 large onions thinly sliced
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  • to taste salt
  • to taste black pepper
  • 2 tbsp flour optional for thickening gravy
  • optional parsley for garnish

  • Roasting pan or slow cooker

Method
 

  1. Preheat oven to 325°F (165°C) or set slow cooker to low.
  2. Sear beef roast on all sides in a skillet until browned; remove.
  3. Caramelize onions in butter, add garlic for 1 minute.
  4. Place roast in roasting pan or slow cooker, top with onions, add broth, Worcestershire, thyme, salt, and pepper.
  5. Cook slowly: oven 3–4 hours covered, slow cooker 6–8 hours low.
  6. Optional: thicken gravy by whisking flour with cold broth, add to cooking liquid.
  7. Slice roast, top with onions and gravy, garnish with parsley, and serve.

Notes

For richer flavor, add 1 cup of red wine to broth.
