Ingredients
  

Muffins
  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 cup unsalted butter melted and cooled
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup milk whole or buttermilk
  • 1.5 cups peaches diced, fresh or canned
Streusel Topping
  • 0.5 cup all-purpose flour
  • 0.25 cup brown sugar
  • 0.5 tsp cinnamon
  • 0.25 cup cold butter cubed
Caramel Drizzle
  • 0.25 cup caramel sauce for topping

Method
 

  1. Preheat oven to 375°F (190°C) and prepare a jumbo muffin tin with liners.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk melted butter and brown sugar, then add eggs and vanilla.
  4. Alternate adding dry ingredients and milk to the wet mixture until just combined.
  5. Fold in diced peaches.
  6. Prepare streusel by mixing flour, sugar, and cinnamon, then cut in cold butter until crumbly.
  7. Fill muffin cups ¾ full and top with streusel.
  8. Bake 23–27 minutes or until golden brown and a toothpick comes out clean.
  9. Cool slightly and drizzle with caramel sauce before serving.

Notes

You can use canned peaches if fresh ones are out of season — just drain them well.
