Ingredients
  

  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
  • 0.67 cup granulated sugar
  • 2 eggs large
  • 0.5 cup Greek yogurt
  • 0.33 cup vegetable oil
  • 1 cup blueberries

Method
 

  1. Preheat oven to 350°F and prepare loaf pan.
  2. Whisk dry ingredients in a bowl.
  3. Mix sugar, lemon zest, eggs, yogurt, oil, and lemon juice.
  4. Fold dry ingredients into wet mixture.
  5. Gently fold in floured blueberries.
  6. Bake 45–55 minutes until set.

Cool completely before glazing for best texture.
