  • 4 salmon fillets skin-on or skinless
  • 1.5 pounds baby potatoes halved
  • 3 cups broccoli florets
  • 4 tbsp unsalted butter melted
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper.
  2. Toss halved potatoes with olive oil, salt, pepper, and paprika. Spread evenly on the sheet pan.
  3. Roast potatoes for 20 minutes until beginning to crisp.
  4. In a small bowl, mix melted butter, lemon juice, lemon zest, and minced garlic.
  5. Push potatoes to one side. Add broccoli and lightly drizzle with olive oil and salt.
  6. Place salmon fillets in the center of the pan. Brush generously with lemon butter mixture.
  7. Bake 12–15 minutes until salmon flakes easily with a fork and potatoes are golden and crispy.
  8. Garnish with fresh parsley and serve with extra lemon wedges.

Notes

For extra crisp potatoes, preheat the sheet pan in the oven before adding them. Avoid overcooking the salmon to maintain moisture.
