Ingredients
  

Crispy Potatoes
  • 2 lbs russet potatoes diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Taco Meat
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 0.33 cup water
Toppings
  • 1.5 cups shredded cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 0.5 cup sour cream
  • 1 avocado diced
  • 2 tbsp fresh cilantro chopped

Equipment

  • Large mixing bowl

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss diced potatoes with olive oil and seasonings.
  3. Roast for 30–35 minutes until crispy and golden.
  4. Brown ground beef in a skillet and drain excess grease.
  5. Add taco seasoning and water; simmer until thickened.
  6. Divide roasted potatoes into bowls.
  7. Top with taco meat and shredded cheese.
  8. Add fresh toppings and serve warm.

Notes

For extra crispiness, broil potatoes for the last 2–3 minutes.
