Ingredients
  

Chia Base
  • 3 tbsp chia seeds
  • 1 cup coconut milk or almond milk
  • 1 tbsp honey or maple syrup optional
  • 0.5 tsp vanilla extract
Fruit Layers & Toppings
  • 1 ripe mango diced and pureed
  • 1 cup dragon fruit cubed
  • 2 tbsp shredded coconut optional
  • 1 tbsp chia seeds for topping

Method
 

  1. Combine chia seeds, coconut milk, honey, and vanilla in a bowl or jar and stir well.
  2. Let sit for 5 minutes, then stir again to prevent clumping.
  3. Cover and refrigerate for at least 4 hours or overnight until thick.
  4. Blend half of the mango into a puree and keep the rest diced.
  5. Layer chia pudding, mango puree, and dragon fruit in serving jars.
  6. Top with shredded coconut, extra chia seeds, and fresh fruit before serving chilled.

Notes

Stir twice during the first 10 minutes to prevent chia clumps and ensure a smooth pudding texture.
