Ingredients
  

Mushroom Marinade
  • 1 lb cremini or button mushrooms cleaned and trimmed
  • 3 tbsp olive oil
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic minced
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh thyme leaves
  • 0.5 tsp black pepper
  • 0.25 tsp smoked paprika optional
  • 1 tbsp lemon juice

Equipment

Method
 

  1. Wipe mushrooms clean and trim stems.
  2. Whisk all marinade ingredients together in a bowl.
  3. Add mushrooms and toss to coat. Marinate for 30 minutes.
  4. Preheat grill to medium-high and oil grates.
  5. Thread mushrooms onto skewers and grill for 10–12 minutes, turning occasionally.
  6. Garnish with parsley and serve immediately.

Notes

Soak wooden skewers in water before grilling to prevent burning.
