Ingredients
  

Chicken & Marinade
  • 2 boneless, skinless chicken breasts
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 1 clove garlic minced
  • 1 tsp ginger grated
Broth
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp chili paste optional
  • 1 tsp sesame oil
Ramen & Toppings
  • 2 servings ramen noodles fresh or dried
  • 2 soft-boiled eggs halved
  • 1 cup baby spinach
  • 2 green onions sliced
  • 1 tsp sesame seeds

Method
 

  1. In a small bowl, combine soy sauce, mirin, sesame oil, garlic, and ginger for the chicken marinade. Marinate chicken for 15–60 minutes.
  2. Heat a skillet over medium heat. Cook chicken 5–7 minutes per side until fully cooked and golden. Slice thinly.
  3. In a medium pot, combine chicken broth, coconut milk, soy sauce, mirin, chili paste, and sesame oil. Simmer gently.
  4. Cook ramen noodles according to package instructions. Drain and set aside.
  5. Divide noodles into bowls. Pour hot broth over noodles, then top with sliced chicken, soft-boiled eggs, baby spinach, and additional toppings.
  6. Garnish with sliced green onions, sesame seeds, and a drizzle of sesame or chili oil.
  7. Serve immediately while warm.

Notes

For extra flavor, toast sesame seeds or add mushrooms and corn. Broth can be made a day in advance.
