Method
- In a small bowl, combine soy sauce, mirin, sesame oil, garlic, and ginger for the chicken marinade. Marinate chicken for 15–60 minutes.
- Heat a skillet over medium heat. Cook chicken 5–7 minutes per side until fully cooked and golden. Slice thinly.
- In a medium pot, combine chicken broth, coconut milk, soy sauce, mirin, chili paste, and sesame oil. Simmer gently.
- Cook ramen noodles according to package instructions. Drain and set aside.
- Divide noodles into bowls. Pour hot broth over noodles, then top with sliced chicken, soft-boiled eggs, baby spinach, and additional toppings.
- Garnish with sliced green onions, sesame seeds, and a drizzle of sesame or chili oil.
- Serve immediately while warm.
Notes
For extra flavor, toast sesame seeds or add mushrooms and corn. Broth can be made a day in advance.
