Chocolate Mousse
  • 6 oz dark chocolate finely chopped
  • 2 tbsp unsalted butter
  • 1 cup heavy whipping cream cold
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
Raspberry Mousse
  • 1.5 cups fresh raspberries
  • 4 oz cream cheese softened
  • 0.5 cup heavy whipping cream cold
  • 0.25 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Melt dark chocolate and butter together until smooth; cool slightly.
  2. Whip heavy cream with powdered sugar and vanilla to soft peaks.
  3. Fold melted chocolate into whipped cream to form chocolate mousse.
  4. Spoon chocolate mousse into serving cups and chill.
  5. Blend raspberries until smooth; strain if desired.
  6. Beat cream cheese with powdered sugar and vanilla, then mix in raspberry purée.
  7. Whip remaining cream and fold into raspberry mixture.
  8. Layer raspberry mousse over chocolate layer and chill until set.

Notes

Chill overnight for best texture and flavor. Garnish just before serving.
