Ingredients
  

Stir Fry
  • 1.5 lbs chicken breast sliced into strips
  • 2 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini halved and sliced
  • 1 red onion sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup kalamata olives pitted
  • 3 cloves garlic minced
  • 1 tbsp lemon zest
  • 1 lemon juice from 1 lemon
Seasoning
  • 1 tsp smoked paprika
  • 1 tsp oregano dried
  • 0.5 tsp basil dried
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 0.25 tsp red pepper flakes optional
Finish
  • fresh parsley for garnish
  • feta cheese optional topping

Equipment

  • Large skillet
  • Cutting board

Method
 

  1. Season sliced chicken with salt, pepper, smoked paprika, oregano, and basil.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken for 5–7 minutes until golden and cooked through. Remove to a plate.
  4. Add onion, peppers, and zucchini to the skillet. Cook 5–7 minutes until softened.
  5. Add garlic and cook for 30 seconds.
  6. Stir in cherry tomatoes and olives. Cook until tomatoes begin to soften.
  7. Return chicken to the skillet and stir in lemon juice and zest.
  8. Garnish with parsley and optional feta. Serve warm.

Notes

Serve with rice, couscous, quinoa, or warm pita.
