Ingredients
  

Steak
  • 1.5 lbs flank steak
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp oregano
Bowl Base
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup red onion sliced
  • 0.5 cup Kalamata olives
  • 0.5 cup feta cheese crumbled
Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cup grated cucumber squeezed dry

Equipment

  • Mixing bowls

Method
 

  1. Marinate steak with olive oil, garlic, lemon juice, oregano, salt, and pepper.
  2. Prepare tzatziki by mixing yogurt, cucumber, lemon, garlic, dill, and salt.
  3. Cook steak 4–6 minutes per side and rest before slicing.
  4. Prepare rice or quinoa.
  5. Assemble bowls with grains, steak, vegetables, feta, and tzatziki.

Notes

For meal prep, store sauce separately and slice steak fresh for best texture.
