  • 4 sweet potatoes medium
  • 1 cup chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 0.33 cup feta cheese crumbled

Method
 

  1. Roast sweet potatoes until tender.
  2. Prepare Mediterranean filling while potatoes cook.
  3. Slice potatoes and fluff centers.
  4. Fill with Mediterranean mixture and garnish.
