  • 4 sweet potatoes
  • 1 tbsp olive oil
Filling
  • 1 can chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 0.25 cup feta cheese crumbled

Method
 

  1. Preheat oven and roast sweet potatoes until tender.

Notes

For vegan option, omit feta. Add grilled chicken for extra protein.
