Ingredients
  

Chicken Bombs
  • 1.5 lb chicken breasts sliced into thin cutlets
  • 6 pieces mozzarella sticks or 1 cup cubed mozzarella
  • 2 tbsp olive oil or melted butter
  • 1 packet ranch seasoning mix
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt adjust to taste
  • 1 tbsp parsley chopped, for garnish
  • 0.5 cup breadcrumbs optional, for crispy coating
  • 6 pieces bacon optional, for wrapping

Method
 

  1. Slice chicken breasts into thin cutlets and pound if needed.
  2. Place mozzarella on one end of each chicken strip and roll tightly.
  3. Mix ranch seasoning, garlic powder, paprika, pepper, salt, and optional breadcrumbs.
  4. Coat each chicken bomb in the mixture.
  5. Sear in a skillet with oil until golden on all sides.
  6. Transfer to a baking dish and bake at 400°F for 18–20 minutes.
  7. Remove toothpicks, garnish with parsley, and serve warm.

Notes

For extra melty centers, use whole mozzarella sticks rather than shredded cheese.
