Ingredients
  

Sweet Potatoes
  • 3 large sweet potatoes peeled and cut into 2-inch rounds
  • 4 tbsp butter melted
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Miso Glaze
  • 2 tbsp white miso paste
  • 2 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp butter melted
  • 1 clove garlic grated
  • 1 tsp rice vinegar or lemon juice
Garnish
  • sesame seeds
  • scallions thinly sliced

Equipment

Method
 

  1. Preheat oven to 425°F (220°C). Lightly grease a baking pan.
  2. Arrange sweet potato rounds in a single layer and brush with melted butter. Sprinkle with salt and pepper.
  3. Roast for 25 minutes, then flip each round.
  4. Whisk miso paste, maple syrup, soy sauce, melted butter, garlic, and rice vinegar to make the glaze.
  5. Brush glaze generously over sweet potatoes.
  6. Roast another 20–25 minutes, basting halfway through, until caramelized and meltingly soft.
  7. Transfer to a serving platter and drizzle with remaining pan glaze.
  8. Garnish with sesame seeds and scallions before serving.

Notes

For extra caramelization, broil for 1–2 minutes at the end. Add chili flakes for a spicy version.
