Method
- Preheat oven to 425°F (220°C). Lightly grease a baking pan.
- Arrange sweet potato rounds in a single layer and brush with melted butter. Sprinkle with salt and pepper.
- Roast for 25 minutes, then flip each round.
- Whisk miso paste, maple syrup, soy sauce, melted butter, garlic, and rice vinegar to make the glaze.
- Brush glaze generously over sweet potatoes.
- Roast another 20–25 minutes, basting halfway through, until caramelized and meltingly soft.
- Transfer to a serving platter and drizzle with remaining pan glaze.
- Garnish with sesame seeds and scallions before serving.
Notes
For extra caramelization, broil for 1–2 minutes at the end. Add chili flakes for a spicy version.
