  • 1 cup rolled oats
  • 0.5 cup shredded carrots excess moisture removed
  • 0.5 cup almond butter
  • 3 tbsp maple syrup or honey
  • 1 tbsp chia seeds optional
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 cup shredded coconut

Method
 

  1. Mix oats, spices, coconut, and chia seeds.
  2. Add shredded carrots, almond butter, and maple syrup.
  3. Stir until mixture holds together.

  5. Roll into balls and coat in coconut if desired.
