Crust
  • 1 chocolate cookie crust 9-inch
Chocolate Filling
  • 8 oz cream cheese softened
  • 1 box instant chocolate pudding mix 3.9 oz
  • 1.5 cups milk cold
  • 8 oz whipped topping thawed
Coconut-Pecan Topping
  • 0.5 cup butter
  • 0.5 cup brown sugar packed
  • 0.5 cup evaporated milk
  • 1 cup sweetened shredded coconut
  • 1 cup pecans chopped
  • 1 tsp vanilla extract

Method
 

  1. Beat cream cheese until smooth, then mix in pudding and milk until thick.
  2. Fold in whipped topping and spread mixture into crust.
  3. Cook butter, brown sugar, and evaporated milk until slightly thickened.
  4. Stir in coconut, pecans, and vanilla; cool slightly.
  5. Spread topping over chocolate layer and refrigerate until set.
